Plenty of info and options here mate - do a search on tyres, chips, suspension kits etc. Much comes down to personal preference and cost.
My $0.02 is to avoid chips at all costs or prepare for costs. Never listen to how safe the seller says the chip is lol
Keep it legal - a 2in lift (Dobinsons, Ultimate etc) will get you a long way on 31in tyres. Diff locks will get you far far further.
Those rims are fine. Check to see if the 16in rims will go over your front brakes (I cant remember if your model has larger brakes). 17in rims are good as well and there are probably more tyres to choose from these days. 17in also gives you the option or running Prado 120 front brakes - an extremely worth while upgrade.
