Wheels and tyres confusion

Howdy everyone, Just a bit of confusion with what to put on my 08 SR5 wheels and tyres wise.
Questions I have are pretty basic probably but I've not gone down this path before..

Are there any pros and cons with using 15' or 16' wheels?
And what would be the largest tyre I could wear on a ute with no lift?
Changing out my factory rims and tyres now after 120K
I am up the beach mostly so no need for mud slingers
