Personally recommend the bridgestone desert duellers 697s.

I run 265 70 16 Bridgestone 697LT's, about $250 each from Bob Jane, on 7" rims. Very happy with them and have my 3rd set on the car, I travel in the deserts and replace my tyres fairly regularly.
The tyre repair guy in Coober Pedy gave me some good advise on tyre selection, based on his experience repairing about 20 tyres every day for years --
1. They must be round and black -- very important.
2. Look for the highest Load Rating, ie. a 123 rated tyre will be a much tougher tyre than a 109 rated tyre.
3. Choose a tread pattern that you think will look tough on your truck.
