Can someone please tell me whether or not rims from a 2017 SR5 will fit a 2007 SR?

Yes.
It would be worth checking the offset of the 2017 rims but I doubt they would stick outside the 2007 SR guards.

Can’t see there being a problem the genuine rims sit well inside the arch of a 2017. I went the opposite way. Went to neg12 and 265/65r16 on my 17 and they are just outside arch. Believe the originals were plus 20 by 18” but I could be very wrong there. Memory ain’t that great
