Obviously the leather SR5 seats would be a plug and play (seatbelt dash lights etc.) but I don't know if the wiring harness will connect the electronic seat adjustment. Likely easy to find from a wreckers, so just check with your local Toyota dealer re wiring.
I'm currently also looking to change my SR seats as I'm 6'4 and the stock aren't the best ergonomics. I'm considering some aftermarket sports seats or some Toyota 86 seats which are more supportive, so if anyone has done I'm also keen to learn.

Id go this route. Personally i dont like the factory leather seats. ( i have the pre perforated type) Get a trimmer......Maybe i dont like them because with the factory leather option it means electic power seat. It just sux
